- beef stew 1” cubes
- 6 onions sliced
- 2 Tbsp olive oil
- 4 Tbsp butter
- salt & lots of fresh black pepper
Cooked on low broil to get onions browned and meat seared, mixing as we go.
Then:
- 2 cloves garlic minced
- 1 cup red wine
- large jar chopped roasted red pepper
- 3 Tbsp tomato paste
- 2 tsp Calabrian chillies
Low and slow at 350F as onions melt and beef gets tender.
