Looked at Spanish Beans with Tomatoes and Onions for inspiration and then cooked up Skipper Otto Lingcod with it.

Sautéed some onions in olive oil and cumin seeds. Add a clove of garlic and then a handful of sliced mushrooms that needed using up. Salt and black pepper. Hungarian paprika.

Can of Falesca Molisana White Spanish Beans

Can of Bianco DiNapoli Whole Peeled Tomatoes, cut the tomatoes into chunks in the pan, added a little water, added some capers and a little caper brine.

Put the piece of lingcod in the pan straight from the freezer, covered it in beans / tomatoes / onions and put in a 350F oven for 30min.

Served over rice.
