Unseasoned Rice Vinegar

  • acidity: 4-5%
  • mellow sweet

Distilled White Vinegar

  • acidity: about 5%
  • clean, neutral, sharp

Cider Vinegar

  • acidity: about 5%
  • sharp with round, pronounced fruitiness

White Wine Vinegar

  • acidity: 5-7%
  • bright, delicately floral

Red Wine Vinegar

  • acidity: 5-8%
  • tart, richly fruity


Brines include salt for seasoning. Use any type of additive-free salt, such as Diamond Crystal kosher salt (Morton kosher salt is not ideal because it contains an anti-caking ingredient), or seek out canning and pickling salt, often called preserving salt, a fine-grained product that dissolves easily.
