- 2 lbs pork steak
- 2 cloves garlic, sliced
- 4 shallots, chopped
- one large onion, sliced
- fresh lemon grass
- black vinegar
- soy sauce
- black pepper
I sautéed the shallots and garlic in a little oil + a little sesame oil until starting to soften and brown. Added in all the onion slices – halved the onion, then cut cm wide slices, and 3 inch long stalks of lemon grass, cut in half.
Cubed the meat, including cutting along the seams of fat. Didn't trim them, just put them into the pot.
Added soy sauce and black vinegar to taste. Added fresh cracked black pepper.
Brought to boil and then reduced to summer for 1.5 hours.
