I often make this with raw garlic (although less than 12 cloves!), and usually just use 2 whole eggs.
- 12 cloves garlic, roasted
- 1/2 teaspoon salt
- 2 egg yolks, or 1 egg yolk and 1 whole egg
- 250ml / 8 fl oz mild extra-virgin olive oil
Chick Peas with Garlic Mouselline is the thing I most often make with this, but anything that you want to add some protein and tang to would be great with this – you just run it under the broiler and it puffs up and browns.
